Matt’s Notes:
Zacapa 23 Rum is aged in a complex ‘Solera System’ – a process in which different ages and profiles of Rum are blended and aged in a succession of casks. The first casks previously held full-bodied American whiskeys, the second delicate Sherries and the last elegant Pedro Ximenez Wines. The end result is a unique blend of rums aged between 6 to 23 years with compelling notes of honey, caramel, spiced oak and flavours of dried fruits.
The soft start develops complexity in the glass; rich aromas of caramel, vanilla and cacao, combining with layers of flavour indicative of the different barrels in the solera process; sherried notes of caramelised, roasted brazil nuts and hazelnuts, and the characteristic rounded toffeed banana from the ex American Whiskey casks.
